Nana Michelle Aloha Recipes Strawberry Bits Mini Cakes

When the Wildchild boys were home for Spring Break I had to keep them busy so they would stay out of trouble. We did a look at what we had in the pantry and kitchen to bake with and this is the ingredient list the Wildchild boys put before me and we created this in our kitchen playing Chopped Chef lol with me being the Chef of the day.

Ingredients:

1 Box of Betty Crocker Super Moist Vanilla Cake Mix

1/4 cup of very finely minced fresh hulled (a fancy term for take the stems off) strawberries

Filling and Frosting Ingredients:

One container of the generic version of Cool Whip (the light version is what I used)

(1)  8 oz. block of Cream Cheese softened to room temperature (I used the lighter version)

2 Tbsp. of Nutella

3 tbsp. of canned crushed pineapple (drained until you can get as much of the liquid out as possible)

Decorations:

Dried Pineapple Slices

Strawberry slices and finely chopped bits

Cake Directions:

1. Make the cake according to the directions and after you have mixed it on medium speed for the two minutes the directions on the box fold in the minced strawberries until they are evenly distributed in your cake batter.

2. Bake the cake according to directions (note I used my mini cake pans so I had 6 mini cakes going and it took about 25 minutes until my top was nice and toasty brown which is the way we like it).

3. Remove from oven and allow to cool completely.

Frosting Directions:

1. Combine the container of Cool Whip, the softened block of cream cheese and until it is blended well.

2. Add the crushed pineapple in and mix well.

3. Refrigerate until ready for use.

Filling Directions:

1. Take about 1/2 cup of the frosting and add in the Nutella with a whisk until it is light and fluffy and well mixed.

2. Refrigerate until ready for use.

3. When the mini cake has cooled cut out the center (I used would you believe and it works perfectly a plastic soda bottle top) and don’t go all the way to bottom leave some cake for the filling to nest in on the bottom.

4. Take a round measuring tsp. and spoon the Nutella filling in the hole and level it off even with the cake.

Frosting the Mini Cake Directions:

1. Frost your Mini Cakes and top with two pieces of Dried Pineapple and a slice of Strawberry in the middle.

2. Take the fine chopped strawberry pieces and stick them randomly into the frosting.
